Do ultrasonic knives require less sharpening than regular knives?Updated 6 days ago

Generally, yes - you won't need to sharpen the C-200 as frequently as a normal knife. Because the ultrasonic vibrations handle a lot of the cutting effort, the blade's sharpness is less critical over short-term use. Even as the edge eventually dulls, the knife will still cut more easily than an equivalently dull conventional knife (the ultrasonic effect compensates for some dullness). That said, the ultrasonics are a multiplier on sharpness, so a sharper blade will perform even better when on.
