What does an ultrasonic knife do?Updated 6 days ago

An ultrasonic knife uses high-frequency vibrations in the blade to help it cut with less force and less sticking. The C-200's blade oscillates microscopically (about 10-20-micron stroke length) at over 40,000 times per second. The motion is too small to see with the unaided eye, too high frequency to hear, and the vibrations are isolated in the blade so you don't feel them in the handle.
