Why no full tang?Updated a month ago
The handle contains the battery, circuit board, and the working parts of a commercial ultrasonic food cutter — all miniaturized to fit a kitchen knife. So there's no room for a full tang. However, we poured significant engineering into the blade-handle connection to make sure it holds up to real kitchen use. How much force can the connection actually take? We attached the knife to a robotic arm and applied over 50 lbs of downward force — more than two human arms can generate.
If you regularly split lobster shells or hack through frozen meat, keep a cleaver handy. For everything a chef's knife is designed to do, the structure is sound.
